Overnight Buttermilk Waffles

Pre-fermented buttermilk waffles - gluten free, sugar free, healthy

My kids LOVE waffles. And I have to admit, they are so much more fun than pancakes. We like our buttermilk waffles crispy and topped with fruit and whipping cream. It’s a delicious, healthy and minecraft-inspired breakfast (ah the things you learn when you have kids).

Anyways, this recipe is certainly a huge favourite in my house. We make buttermilk waffles nearly every weekend, then freeze the leftovers for after school snacks.

Flavour your waffles!

Buttermilk waffles are a great basic recipe for all sorts of different waffle flavours.

  1. Savoury: Savoury waffles are perfect for brunch, snack or as a fun alternative to bread with dinner! When making savoury waffles, don’t include sugar in your batter. Add in a 1/4 cup of additional ingredients like: fresh herbs, green onion, diced sun-dried tomatoes or cheese.
  2. Sweet: Sweet waffles are delicious treats that can be a fancy dessert if served with whipping cream or ice cream. You can add in up to 1/4 cup of tiny chocolate chips or chopped berries. Use a 1/2 tsp of flavours like ground cinnamon or citrus zest.

Ingredients
  • 2 cups of flour (see notes)
  • 2 cups of cultured buttermilk or kefir
  • ¾ cup of melted butter
  • 3 eggs
  • ¼ tsp salt
  • 1 tsp baking soda
  • 2 tbsp sugar (optional)
Instructions
  1. Mix the flour and buttermilk the night before. Cover with an airtight cover and leave in a warm location. (The recipe will work without pre-fermentation, but I recommend trying it!)
  2. The next morning preheat your waffle iron on medium.
  3. Mix in the remaining ingredients into your batter. If you used wheat flour, mixture will have developed gluten. Don't worry about being gentle, just mix until you have a smooth batter.
  4. Cook according to the directions of on your waffle iron and enjoy!

Notes:
-Not a morning person? Mix everything but the eggs and baking soda into your batter the night before.
-As a gluten free person, I usually use gluten free oat flour for my waffles.  Any gluten free or whole grain flour will work. If you want to use white flour, use a low-gluten pastry flour so that the overnight ferment doesn’t build up too much gluten.
-I never put sugar into my waffle batter, but if you like sweet waffle, then add in 2 tbsp of your favourite sweetener.
-I use a stove-top waffle maker. It’s ceramic, though close enough to the cast iron waffle maker of my childhood to satisfy me!
