Simple & Healthy Ice Cream Cake

Making a healthier ice cream cake is easy by using refined sugar-free and probiotic ice cream. See the sections above for suggestions on creating your own unique ice cream cake flavor.

Ingredients

  • 1/4 cup butter
  • 1 1/4 cups of crumbs (cookie crumbs or ground nuts – see notes)
  • 3 cups of ice cream
  • 1 cup of whipping cream, to serve

Instructions

  1. See the section above for 5 different ice cream cake flavors. Alternatively, feel free to invent your combination using your favorite ice cream flavors!
  2. Melt the butter and mix it with the crumbs to make a dough-like paste. Press half of the crumb mixture into the base of a 6″ springform cake pan.
  3. Top the crumbs with 1 1/2 cups of ice cream. If you are using store-bought ice cream, allow it to defrost slightly before making the cake as it will be easier to spread. If you’re using homemade ice cream, spread it out right after churning.
  4. Place the cake in the freezer for at least 1 hour to freeze the first ice cream layer. Then cover the layer of ice cream with the other half of the crumb mixture. If the ice cream is still a bit soft, you won’t be able to press the crumbs into a smooth layer. That’s fine, just crumble it over the ice cream instead. (I’m usually not patient enough to completely freeze the ice cream before adding the second layer!)
  5. Add a second layer of ice cream using 1 1/2 cups of ice cream.
  6. Refreeze the cake. When it is completely frozen (about 3 hours), store the cake in a large zip-top bag in the freezer until ready to serve. Allow the cake to defrost for 10 minutes before serving. At this point, it can be decorated with whipping cream, fresh fruit, or fruit sauces.

Notes

  • Graham cracker crumbs or chocolate wafer cookie crumbs are a traditional base for this cake. If you want to do a lower carb and refined sugar-free option, use ground nuts instead. Almond meal is an easy option. Otherwise, toast your favorite nuts (hazelnuts and pecans are delicious) and grind them in a food processor.
